As I composed the dinner around the Mouton 1945, I wanted to associate Mouton 1918 as it is also a year of end of war.pan>p><p style="BACKGROUND: white">pan lang="EN-GB" style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana">As there was end of war, Montrachet 1939 will represent the year of the beginning of war. pan>p><p style="BACKGROUND: white">pan lang="EN-GB" style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana">The Algerian wine will be there because North Africa has played a magnificent role in helping France to survive, and to take the year of the victory is a way to send a message.pan>p><p style="BACKGROUND: white">pan lang="EN-GB" style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana">As the years of victory immediately make think of America, I took a Yquem 1889, the year of the Eiffel Tower, just to say to American friends : we love you.pan>p><p style="BACKGROUND: white">pan lang="EN-GB" style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana">The 1912 wine is the birth year of my mother who died last year. If I am what I have become, I owe it to her completely. pan>p><p style="BACKGROUND: white">pan lang="EN-GB" style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana">As 1945 was represented two times, never two without three, I took Moët 1945.pan>p><p style="BACKGROUND: white">pan lang="EN-GB" style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana">Why Dom Pérignon 1975 ? For only one reason : I like that at one moment there is no logic in my choice.pan>p><p style="BACKGROUND: white">The Romanée Contipan lang="EN-GB" style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana"> 1982 is there because there should be one Romanée Conti. And the Yquem 1899 is a gift made by one of the attendants.pan>p><p style="BACKGROUND: white">pan lang="EN-GB" style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana">And now I finish with the rosé de Mouton. I have this bottle. I do not know what it is. It could be a table wine, but it is strange for me. I adore to associate obscure wines to famous wine. It was the occasion to associate this rosé to the famous Mouton 1945. The year 1936 is the year of the institution of paid vacations. I have not a specific sympathy to socialists, but this year is famous for the first paid vacations in France. pan>p><p style="BACKGROUND: white">pan lang="EN-GB" style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana">Of course, I am extremely excited. Une moiteur lourde pèse sur le paysage sauternais. Je me présente au pan>pan style="FONT-SIZE: 10pt; COLOR: blue; FONT-FAMILY: Verdana">château d’Yquem lepan style="FONT-WEIGHT: normal; COLOR: black"> matin, pour redresser les bouteilles du dîner, qui reposent dans le caveau du château d’Yquem depuis un mois. J’ouvre aussi la demie bouteille qui sera le cadeau que je tiens à offrir à ceux qui ont toujours facilité mes contacts avec Yquem. Le niveau est bas, la couleur est d’une densité forte, très brune en bouteille et merveilleusement dorée dans le verre. Le nez est incroyablement puissant, ressenti même à trois mètres du verre. En bouche, l’attaque est d’un gras spectaculaire. C’est un signe d’excellence. Le pamplemousse rose signe l’attaque et se prolonge par des évocations de caramel et de café. C’est tellement parfait que je ressens la fierté de chacun. Travailler pour un vignoble qui peut produire une telle merveille permet à chacun d’avoir un sourire épanoui. Cette communion émouvante me remplit de plaisir. La longueur de ce vin se prolonge dans ces sourires. J’ai demandé à Sandrine de pouvoir boire le rouge d’Yquem, vin qui est réservé à la consommation du château d’Yquem. Sandrine a pris pan>pan style="FONT-SIZE: 10pt; COLOR: red; FONT-FAMILY: Verdana">Yquem rouge 1997pan>pan style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana">, vin très ordinaire et de plus légèrement bouchonné mais qui a pour moi un charmepan>  pan>particulier : c’est le vin que l’on boit à Yquem à la fin des vendanges. Il a encore plus de saveur car les vignes ont été arrachées en 2004. Ce vin rouge d’Yquem n’existera plus jamais. J’ai commandé pan>pan style="FONT-SIZE: 10pt; COLOR: red; FONT-FAMILY: Verdana">Château Ausone 1960pan>pan style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana"> qui sera accompagné de foie gras et de ris de veau. Comme c’est toujours le cas au restaurant, ce sont les dernières gorgées des vins anciens qui sont les plus belles. L’Ausone à peine ouvert est un peu poussiéreux en bouche, mais promet car sa concentration est remarquable. Au fil du temps il se colore, le fruit s’expose, et les saveurs sucrées du foie gras et du ris de veau délicieux lui donnent de l’opulence. On voit l'un des plus beaux pins de la façade ouest. La veille du dîner à Yquem dimanche, 15 avril 2007

<p style="TEXT-ALIGN: justify">pan style="FONT-SIZE: 10pt; FONT-FAMILY: Verdana">Je me rends à pan style="COLOR: blue">l’hôtel du Château d’Archepan>, à une portée de fusil du château d’Yquem où se tiendra un dîner qui, je l’espère, fera date dans la dégustation de vins historiques. Des convives de ce dîner me rejoignent la veille et nous allons dîner dans un petit restaurant de Preignac, pan style="COLOR: blue">« Les Erables »,pan> qui contrairement à ce que le nom évoque, est spécialiste de poissons. Ce n’est pas une adresse que je recommanderais pour un festin gastronomique, mais un pan style="COLOR: red">Pavillon Rouge de Château Margaux 1996pan> est un vin très agréable et de belle mâche. pan>p><p style="TEXT-ALIGN: justify">pan style="FONT-SIZE: 10pt; FONT-FAMILY: Verdana">Demain, c’est un grand moment œnologique qui se tiendra dans mon Taj Mahal personnel : château d’Yquem.pan>p>

Nous sommes cinq autour de la table pour le dîner final, rejoints par un couple d’amateurs de vins bordelais jeunes et fort sympathiques. J’étais venu à 16 heures pour ouvrir mes deux bouteilles. Celles de mes amis sont ouvertes au dernier moment. Le 1945 était d’une puissance généreuse. Il sentait la confiture de framboise et évoquait les fûts de chêne. Hélas, en processus de décoloration, le vin tourne en vinaigre. Cette bouteille, reconditionnée et rebouchée au château en 1999 n’aurait jamais dû être rebouchée. Car la blessure qu’elle affiche aujourd’hui n’est pas récente. Elle eût dû être détectée à ce moment là. Fort heureusement ma deuxième bouteille, pan>pan style="FONT-SIZE: 10pt; COLOR: red; FONT-FAMILY: Verdana">Mission Haut-Brion 1948pan>pan style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana">, est parfaite. La couleur est belle, d’un rouge profond, l’odeur est de truffe et le goût est intense, puissant, envahissant de plaisir. Un vin fort agréable à boire qui fait contraste au pan>pan style="FONT-SIZE: 10pt; COLOR: red; FONT-FAMILY: Verdana">Mission Haut-Brion 1926pan>pan style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana">, d’une année de pleine réussite pour les Graves, un peu plus léger que le 1948. Ce vin a une trame parfaite, emplit la bouche d’un liquide serein, structuré qui rassure sur la beauté de son terroir d’origine. Le troisième compère, en apportant Mission Haut-Brion 1pan>pan style="FONT-SIZE: 10pt; COLOR: red; FONT-FAMILY: Verdana">929pan>pan style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana"> ne connaissait pas nos apports. La surprise n’en fut que plus belle, d’autant plus que son vin fut pour tous le plus parfait des trois. Mission 1929 est intéressant parce qu’il montre que les dimensions d’un vin sont sans limite. On se plait avec le 1948, on applaudit la structure du 1926, et le 1929 vient montrer qu’il existe un Mission Haut-Brion qui est la synthèse de tout. D’un équilibre majeur, sans aucune faute de goût, ce vin est « la » définition de Mission. C’est un sauternes que l’on pourrait qualifier de léger, de peu sucré, mais qui n’en dégage que mieux ses subtiles qualités. J’adore ces sauternes qui suggèrent plus qu’ils n’assènent des vérités. pan>p><p style="TEXT-ALIGN: justify">pan style="FONT-SIZE: 10pt; COLOR: black; FONT-FAMILY: Verdana">Nous avons voté, comme on le fait habituellement dans les dîners de wine-dinners. La Mission 1929 recueillit quatre votes de premier sur cinq votants. Le Laville 1947 eut un vote de premier. Je suis fier d’avoir partagé le premier et le dernier dîner de son périple avec des vins de première grandeur. Nous nous sommes promis de nous voir au moins trois fois par an. Il y a tant de grandissimes bouteilles qu’il nous faut partager avec nos enfants.pan>p><p style="TEXT-ALIGN: justify" />pan>
